INGREDIENTS:
1 packet unflavored gelatin 1 cup sugar
2 teaspoons lemon extract 1 cup tapioca
6 cups water
1-1/2 cups coconut milk diluted with 4 cups water
Prepare gelatin according to directions.
Add sugar and lemon extract. Mix well. Let set
in a shallow container.
Boil tapioca in 6 cups water until tapioca becomes clear. Cool
and drain. Mix tapioca,
gelatin (cut into 1/2-inch squares) and coconut milk and serve
