.::Maja Blanca Maiz (Coconut Corn Cake)::..

INGREDIENTS:
2 cups corn kernels, fresh or canned
10 cups milk
1 cup white sugar 1/2 cup fresh coconut oil
1 teaspoon toasted anise
3 cups grated coconut meat (for latik)
1 cup latik
Put corn kernels in a food processor.
Blend, then strain in a sieve. To the strained
corn, add milk and sugar and cook over medium heat. Stir constantly
and add
fresh coconut oil little by little to avoid burning. When thick,
add toasted anise and
mix well. Pour into serving platter greased with coconut oil.
When cool, serve with
latik.
