.::Bachoy (Sauteed Pork with Kidney and Liver)::..

INGREDIENTS:
1/2 pound pork loin, cubed 1/3 pound
beef kidney, cubed
1/3 pound beef liver, cubed 1/3 pound beef pancreas, cubed
1 cup vegetable or corn oil 1 tablespoon finely minced garlic
1/4 cup finely minced onion 2 tablespoons finely minced ginger
3 cups water 1 tablespoon patis or salt
1/2 teaspoon freshly ground pepper 1/2 pound spinach
Clean the meats thoroughly. In a medium
skillet, heat 1 tablespoon oil and fry all the meat
cubes until brown. Drain and set aside.
In another medium skillet, heat 2 tablespoons
oil and saute garlic, onion and ginger. Cook
until garlic is brown and onion is transparent. Add the fried
meat cubes. Add water and
bring to a boil. Simmer until the meats are tender. Season with
patis or salt and pepper.
Add spinach and cook until wilted. Serve hot
