.::Paksiw Na Baboy (Pork Cooked in Vinegar and
Sugar)::..

4 Servings
INGREDIENTS:
2 pounds pork butt, cut into 2-inch
cubes
2 pounds pigs' knuckles
2 cups white vinegar
4 bay leaves
1/4 cup brown sugar
salt and freshly ground pepper to taste
5 cloves garlic, minced
3 cups water
Combine all ingredients, bring to a
boil and simmer for 2 hours or until pork is tender.
Add more water if necessary. (A pressure cooker may be used to
reduce cooking time).
Serve hot.
