.::Asadong Manok - 3 (Piquant Chicken Stew)::.
6-8 Servings
INGREDIENTS:
3 tbsp. vegetable or corn oil 2 tbsp.
crushed garlic
1/2 cup minced onion 1 cup cubed red, ripe tomatoes
1-3 to 4 lbs. chicken, cut into serving pieces 1 tbsp. peppercorns
or chili peppers
1/8 tsp. freshly ground pepper 2 bay leaves
1/4 cup vinegar 1 tbsp. paprika
1 cup water salt to taste
In a medium-size saucepan, heat oil
and saute garlic until light brown; add onion and
wait until transparent before putting in tomatoes. When tomatoes
turn soft, add
chicken, peppercorns or chili peppers, ground pepper, bay leaves,
vinegar, paprika,
water and salt. Lower heat and simmer until meat is tender
