.::Gambas (Piquant Shrimp)::.

2-4 Servings
INGREDIENTS:
1 pound medium-size shrimp 5 cloves
garlic, minced
1/4 cup olive oil 1/2 tablespoon lemon juice
1/2 cup white wine 1 tablespoon hot chili sauce
1 to 2 tablespoons bread crumbs green olives for garnish
Prepare Spanish tomato sauce (See below
for recipe). Set aside.
Shell and devein shrimp. Set aside.
Brown garlic in olive oil. Add shrimps,
lemon juice, wine and hot chili sauce. Add 3 tablespoons
Spanish tomato sauce. Cook for another minute. Thicken sauce with
bread crumbs. Serve hot over
white rice, garnished with olives.

Spanish Tomato Sauce
INGREDIENTS:
1 tbsp Butter Or Margarine 1/4 small
Onion
1/4 small Green Pepper 1/2 small Garlic Clove
16 oz Tomatoes; Un-drained 6 oz Tomato Paste
1 tsp Sugar 1/2 tsp Dried Oregano Leaves;Crushed
1/2 tsp Pepper 1 dash Salt
Put all of the ingredients in a blender
container and blend until the onion and green pepper are finely
chopped. Simmer, covered, in a saucepan for 30 minutes.
