.::Kardillong Isda (Sauteed Fish with Egg)::.
4-6 Servings
INGREDIENTS:
one 2-pound fish, whole or sliced into
quarters, or any 1-1/2-pound fish fillet
1-1/2 teaspoons salt 1-1/2 teaspoons
lemon juice
1/2 cup flour (optional) 1 cup cooking oil
2 cloves garlic, crushed 1/4 cup sliced onion
3/4 cup diced ripe tomato 1/2 cup water
salt and peper to taste 2 eggs, slightly beaten
Sprinkle salt and lemon juice on fish. Fry in oil until brown.
(When using fish fillets,
shake each fillet in a small plastic bag with 1/2 cup flour before
frying.) Use 2
tablespoons of oil for frying if fish is not floured; 3 tablespoons
if it is. Set aside. In 3
tablespoons hot oil saute garlic until brown; add onion and tomato.
Cook until onion is
transparent and tomato is soft. Add fried fish and water. Simmer
for 5 minutes. Season
with salt and pepper. Add slightly beaten eggs. Simmer for another
2 minutes. Serve
hot.
