.::Mais Guisado (Sauteed Corn)::..

4 Servings
INGREDIENTS:
2 tablespoons cooking oil 1 tablespoon
finely minced garlic
1/4 cup minced onion 1/2 pound spinach
1/2 pound shrimps, shelled, deveined, and cut into small pieces
1/2 cup chicken broth
3 cups corn (canned, frozen or fresh)
salt or patis and freshly ground pepper to taste
Heat oil in a medium pot. Saute garlic until light brown and onion
until transparent.
Add shrimps. Add chicken broth. Season with salt or patis and
pepper. Bring to a
boil. Add corn and simmer until corn is cooked. Add spinach and
simmer for 3
minutes. Serve hot.
